Yame Tea is a rare and highly esteemed brand of tea produced in Fukuoka Prefecture, Japan, accounting for only about 3% of the total Japanese tea production. This green tea, known as Yame-cha, is characterized by its sweet, rich flavor with a strong umami taste. It is also renowned as a production area for the premium green tea Gyokuro, with Yame Traditional Hon Gyokuro being the most famous.

The quality of Yame-cha tea leaves can be judged by their color and shape - the darker green and more slender the leaves, the higher the quality and the more luxurious the tea. The earlier the leaves are harvested in the year, the stronger the sweetness. Conversely, the later the leaves are picked, the more bitterness they will have.

For the high-end Gyokuro or traditional Hon-Gyokuro, the water temperature should be around 40°C, and the leaves should be steeped for about 2 minutes to allow the sweetness and umami to fully develop.
